Get the Luck of the Irish with these Recipes
May the Luck of the Irish be with you this week! I am not Irish, but Everybody is Irish on St. Patrick’s Day right?
We used to go out every St. Patty’s Day but as we have grown older, we just cannot do that crazy scene anymore. That does not mean we don’t want to celebrate. We now like to pick out some fun recipes and celebrate at home. It is much more economical too!
I am all for easy! I picked these recipes for that purpose.
Nothing says St Patrick’s Day more than potatoes and corned beef. Unless you are Irish, cooking corned beef may not be the easy you are looking for. This recipe for Potato and Corned Beef Soup is an easy way around cooking corned beef, because it uses deli corned beef. You may want to purchase it earlier in the week in case there is a run on it Friday. The base is our Perfectly Potato Cheddar Soup Mix.
Of course you need some Irish Bread to go with that soup and Better Than Grandma’s Irish Bread is a great choice!
But what about the cabbage. Corned Beef and Cabbage is a must is in not? Again, I prefer easy and a Corned Beef and Cabbage Stir Fry is quick and again, does not require me to prepare corned beef. It also uses the deli version. EASY! That is my motto. Let’s be Tastefully Simple.
